Firecracker Chicken with rice

From the savory chicken to the spicy sauce and crunchy vegetables, every element comes together to create a quick and easy dish that will leave you craving more.

Ingredients
  

For the sauce

  • 2 cloves garlic finely chopped
  • 1 teaspoon chili flakes
  • 2 tablespoons sesame oil
  • 3 tablespoons ketchup
  • 2 tablespoons light soy sauce adjust to taste
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon chili oil

Other

  • 2 chicken breasts thinly sliced
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika powder
  • 2 tablespoons sesame
  • 2 tablespoons sesame oil
  • 1 onion cut into large chunks
  • 1 bell pepper sliced
  • 2 spring onions sliced
  • 1 cup bean sprouts
  • Mixed chilies sliced (adjust quantity based on preferred spice level)
  • 1 cup prawns deveined

Instructions
 

  • Mix all the sauce ingredients together and set aside.
  • Season the chicken breast slices with black pepper, garlic powder, and paprika powder. Cook the chicken halfway in sesame oil until golden brown. Remove from the pan and set aside.
  • In the same pan Stir-fry the onion, bell pepper, spring onions, bean sprouts, and mixed chilies on high heat for a few minutes. Add in the sauce mixture we made earlier. Stir everything together until well combined.
  • Serve the stir-fry over a bed of steamed rice, and you're done!

  1. Prep Ingredients in Advance: Chop all your vegetables, slice the chicken, and devein the prawns before you start cooking to streamline the process.
  2. Control the Heat: Use high heat for stir-frying to achieve a nice sear on the chicken and vegetables. Be mindful not to overcrowd the pan, which can lead to steaming instead of frying.
  3. Cook Chicken to Perfection: Half-cooking the chicken before adding it back into the stir-fry ensures it remains tender and juicy without overcooking during the final stir-fry.
  4. Add Vegetables in Order: Start with firmer vegetables like onions and bell peppers, followed by softer vegetables like bean sprouts and spring onions. This helps maintain texture and prevent overcooking.
