Ingredients
- – 6 small dollops of chocolate spread
- – 1/2 cup 1 stick unsalted butter, cold
- – 1/2 cup brown sugar
- – 1/2 cup granulated sugar
- – 2 teaspoons vanilla extract
- – 1 large egg
- – 1 egg yolk
- – 2 1/4 cups all-purpose flour
- – 1 tablespoon cornstarch
- – 1 teaspoon baking powder
- – 1/2 teaspoon salt
- – 1 cup chopped chocolate
Instructions
- Begin by placing 6 small dollops , chocolate spread of your choice onto a baking paper lined tray. You can use a spoon or a piping bag to do this. Freeze until fully hardened
- In a large bowl, add the cold butter, both sugars, and vanilla extract. Beat together for 5 minutes until creamy.
- Mix in the egg and egg yolk until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add this mixture along with the chopped chocolate into the wet ingredients. Mix until well combined. The dough may seem crumbly, which is okay.
- Divide the dough into 6 or 7 equal portions.
- Take one portion of cookie dough, flatten it, then place one frozen chocolate spread dollop in the center. Roll the dough into a ball, ensuring the spread is completely covered. Repeat with the remaining dough portions. Place the balls on a tray and freeze for an hour.
- Preheat the oven to 220°C (425°F) about 10 minutes before baking.
- Place the frozen cookie dough balls on a large baking paper lined tray, leaving space between each for spreading.
- Bake the cookies for 20-22 minutes.For flatter cookies, take out the tray halfway through baking and gently slam it against the counter to flatten them slightly.

Avoid overbaking the cookies; remove them immediately from the oven once the baking time is up.
