Notes
- Prep Ingredients in Advance: Chop all your vegetables, slice the chicken, and devein the prawns before you start cooking to streamline the process.
- Control the Heat: Use high heat for stir-frying to achieve a nice sear on the chicken and vegetables. Be mindful not to overcrowd the pan, which can lead to steaming instead of frying.
- Cook Chicken to Perfection: Half-cooking the chicken before adding it back into the stir-fry ensures it remains tender and juicy without overcooking during the final stir-fry.
- Add Vegetables in Order: Start with firmer vegetables like onions and bell peppers, followed by softer vegetables like bean sprouts and spring onions. This helps maintain texture and prevent overcooking.
