Perfect for potlucks or as a starter this Ramadan!What truly sets this dish apart is its delectable dressing, a harmonious blend of olive oil, minced garlic, vinegar, and a hint of mayo for creaminess.

Pasta Salad

A vibrant mix of pasta, crisp vegetables, and tuna tossed in a tangy dressing
Prep Time 30 minutes

Ingredients
  

  • 250 g pasta of your choice penne or fusilli work well
  • 1 cucumber diced
  • 2 tomatoes diced
  • 1 small onion finely chopped
  • 1 carrot grated
  • 1 can of tuna drained
  • Optional: fresh parsley or cilantro for garnish

For the Dressing:

  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tablespoons vinegar white or apple cider vinegar
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon black pepper
  • 2 tablespoons water
  • 1/2 teaspoon curry powder for color
  • Juice of 1 lemon

Instructions
 

  • Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
  • In a large mixing bowl, combine the cooled pasta, diced cucumber, tomatoes, chopped onion, grated carrot, and drained tuna.
  • In a separate small bowl, whisk together the olive oil, minced garlic, vinegar, mayonnaise, black pepper, water, curry powder, and lemon juice until well combined to make the dressing.
  • Pour the dressing over the pasta salad and toss until everything is evenly coated.
  • Taste and adjust seasoning with salt . You can add more lemon juice or black pepper according to your taste preference.
  • Garnish with fresh parsley or cilantro, if desired.
  • Serve chilled and enjoy your delicious and nutritious Pasta Salad!
