Pasta Salad
A vibrant mix of pasta, crisp vegetables, and tuna tossed in a tangy dressing
Ingredients
- 250 g pasta of your choice penne or fusilli work well
- 1 cucumber diced
- 2 tomatoes diced
- 1 small onion finely chopped
- 1 carrot grated
- 1 can of tuna drained
- Optional: fresh parsley or cilantro for garnish
For the Dressing:
- 1/4 cup olive oil
- 2 cloves garlic minced
- 2 tablespoons vinegar white or apple cider vinegar
- 2 tablespoons mayonnaise
- 1/2 teaspoon black pepper
- 2 tablespoons water
- 1/2 teaspoon curry powder for color
- Juice of 1 lemon
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
- In a large mixing bowl, combine the cooled pasta, diced cucumber, tomatoes, chopped onion, grated carrot, and drained tuna.
- In a separate small bowl, whisk together the olive oil, minced garlic, vinegar, mayonnaise, black pepper, water, curry powder, and lemon juice until well combined to make the dressing.
- Pour the dressing over the pasta salad and toss until everything is evenly coated.
- Taste and adjust seasoning with salt . You can add more lemon juice or black pepper according to your taste preference.
- Garnish with fresh parsley or cilantro, if desired.
